Healthy Lemon Bars

Matt converted this recipe from Erin Lives Whole to Thermomix and they are really good and addictive! It’s so hard to stop at eating 1 haha. Really easy to make, love the texture of the base and the beautiful, tangy lemon filling on top. If you are a lover of lemons, you will have to give this one a go.

Makes 12 slices.

Ingredients:

Crust/base:

  • 240 grams almonds

  • 35 grams coconut flour

  • 75 grams maple syrup

  • 50 grams coconut oil

  • 1 tsp vanilla extract

  • 1 pinch of salt

Filling (top layer):

  • 3 eggs

  • 1 egg yolk

  • 150 grams lemon juice

  • 1 tsp lemon zest or 2 grams

  • 90 grams maple syrup

  • 10 grams coconut flour

*Please make sure you use a 20 cm x 20 cm square tin. If you try and do this in a bigger tin/baking tray, the lemon filling will go everywhere. Enjoy :)*

1. Preheat oven to 180 degrees (fan forced) and line a 20cm x 20cm baking tray with silicone baking mat or baking paper.

2. Place almonds in bowl, 10 seconds, speed 9.

3. Place the remaining crust ingredients in TM and mix 10 seconds, speed 5.

4. Pour into prepared baking tray & bake in oven for 15 minutes. While the base is baking, continue and make filling.

5. Clean and dry mixing bowl (optional)

6. Place all filling ingredients in TM bowl. Mix 10 seconds speed 6.

7. Place butterfly in bowl, mix for a further 20 seconds, speed 4. (it will appear runny, that is fine).

8. Once crust has finished baking, immediately pour filling liquid mix on top. Turn oven down to 160 degrees fan forced and bake for 20 minutes (or until the top layer has set)

9. Let cool for 30 minutes before putting in fridge to set for a minimum of 3 hours.

10. Cut into 12 slices/bars and enjoy!

*Please make sure you use a 20 cm x 20 cm square tin. If you try and do this in a bigger tin/baking tray, the lemon filling will go everywhere. Enjoy :)* You can also sprinkle some sifted icing sugar on top if you wish (you can make icing sugar from raw sugar in the TM, speed 9 for 10-20 seconds). Best eaten within 48 hours as the crust can get soft. Also the top layer can get cracks in it when setting. Don’t worry, it’s normal. Still tastes good haha.
